Ingredients

  • 2 fluid ounces white rum
  • 2 fluid ounces cream of coconut
  • ½ cup frozen pineapple chunks
  • 1 fluid ounces pineapple juice
  • ¼ fluid ounces lime juice
  • Pineapple wedge, for garnish
  • 1 cup ice

Measurement Conversions: 1 fl oz = 1 shot = 30ml

How To Make

  • Place white rum, cream of coconut, frozen pineapple chunks, pineapple juice, lime juice and ice into a blender. Blend until smooth.
  • Pour into glasses and garnish with a wedge of pineapple.

Notes

  • Rum - for a variation, you can reduce white rum by ½ fluid ounces and replace with ½ fluid ounce of spiced rum.
  • Cream of Coconut - don’t confuse “cream of coconut” with coconut milk or coconut cream. Coconut cream is unsweetened and very thick, whereas cream of coconut is very sweet and has a syrup-like texture. If you’re stuck, you could substitute cream of coconut with coconut cream sweetened with simple sugar.
  • Consistency - for a thicker drink, add more ice or frozen pineapple and for a thinner version, add more pineapple juice.
